There is a Greyhound Saint called St Guinefort that originated back in the 1200's in France.
He is the protector of infants but is not officially recognized by the Catholic Church.

St Christopher was often depicted with a greyhound's head but technically was not a dog! However there *is* an unofficial dog saint called Guinefort who was a greyhound!
